About this winery

Founded by Don Próspero José Pizzorno, an Italian immigrant who arrived in the 20th century, the family winery is today run by the fourth generation of the Pizzorno family. The family mantra is to respect its environment and maintain family tradition while innovating with the times, in order to produce wine of the best quality. Product notes

Canelones has a marked influence from the Río de la Plata, one of the largest river basins in the world. The soils, clay and silt with a subsoil rich in calcium carbonate, of Canelones are generated from sediments and present high fertility.

Production notes

Carbonic maceration is an ancient winemaking technique without crushing grapes which has its origins among the Greeks and Romans, which the winery has adapted to the Tannat grape variety, being the only one to produce it commercially. The grapes are fermented in whole clusters under a carbon dioxide atmosphere. The must resulting from this pressing finishes fermenting in vats at a controlled temperature in the traditional way.
