The Château d'Aqueria is the largest estate in Tavel. Unusually, its farms are contiguous rather than scattered throughout the appellation.
The grapes, which have reached optimum maturity, are picked, destemmed and gently crushed before undergoing a three-week fermentation in vats. Each grape variety is vinified separately. Once the must is pressed, the juices are blended and 30% of the wines are aged in French oak barrels. The wines age in barrels for eight to ten months, depending on the vintage, before final assembly and bottling at the Château.
This Lirac has a complex and powerful nose of plum and cherry, with hints of pepper. Soft, silky tannins enhance dark red fruit flavors and spice notes while ripe Grenache offers a lovely polished smoothness.
Pairings with lamb, ratatouille and duck breast.
