About this winery

Product notes

It was in 1990 that Crémant de Limoux received its AOC label. It consists of Chardonnay at 50% maximum and Chenin (between 10% and 40%). Pinot noir is present at a maximum of 30%, Mauzac at 20%.

Production notes

In September, the bunches are harvested manually. A first fermentation separately for the grape varieties in stainless steel tanks. The Crémant is bottled with the addition of a liqueur (draw) which provides additional sugar and yeasts to start the second fermentation: the "prize de mousse". After 12 months on lees and they are only marketed after a minimum of 15 months of aging on slats.

Tasting notes

This Crémant has a pale yellow color, topped with a fine and intense foam. Combining notes of toasted hazelnut, spices and white flowers. The palate invites the freshness of notes of boxwood and star anise. An intense and fine crémant which leans resolutely towards freshness and elegance. Pairings with an aperitif, white fish and Roquefort-type cheeses.
