About this winery

The Delmas Spirit We have drawn our strength from our passion to build a strong imprint, a unique style combining tradition and modernity, always respecting the environment and the rules of organic production. The Delmas story begins 3 generations ago: Omer, my father cultivates the 3 hectares of vines he himself inherited from the grandfather. In my turn, since 1986, it is me, Bernard, a cook for 10 years, who now invests myself with Marlène, my wife, to perpetuate and develop the family...

Product notes

In 1938, the AOC was born for Blanquette de Limoux and Blanquette Méthode Ancestrale. From the 17th century, its fame went beyond the local context and the Blanquette de Limoux was used as a quality product offered to lords, great military leaders and ecclesiastical dignitaries. Stemming from five centuries of tradition, the Blanquette de Limoux owes its marked typicality to the Mauzac grape variety on organic clay-limestone soils.

Production notes

Aging on slats: 24 months min. Sugar dosage: Extra Brut (<6 g/l)

Tasting notes

Pale, crystalline color with fine bubbles. Freshness and finesse with notes of ripe apple, mirabelle plum and white flowers. The mouth is silky, velvety, but remains energized by a frank liveliness. Pairings as an aperitif, white fish and apple dessert

Richard Hemming,

Yes – this is Mauzac, which, with its vaguely bruised-apple flavour, can seem quite a shock to champagne drinkers. Very fresh, dry finish and well made. Very honest and straightforward.
