Commentaire de la cuvée Passion 2015 Nature Brut Bio de Bernard Delmas / Crémant de Limoux :
Le nez est discret, non beurré (le vin est encore jeune), quelques accents levurés se laissent saisir. C'est après plusieurs minutes dans le verre qu'on capte un côté boulanger qui rappelle la version Brut.
L'attaque en bouche est vive, tendue, zestée, la version Nature est nette.
Les bulles sont des perles, la texture est suave, tapissante. L'enveloppe citronnée s'accroche sans agresser, tout est à la fois fin et crémeux.
C'est le genre de bulles qui donnent envie d'en reprendre à condition d'être patient, de se comporter avec elles comme avec un vin tranquille, et oui !
À l'apéritif, sur une entrée d'huîtres, un fromage de chèvre ou une tarte aux agrumes.
Un excellent crémant de Limoux. Un excellent crémant tout court ! Et un vin de garde qui devrait facilement rouler jusque 2025...

Product notes
It was in 1990 that Crémant de Limoux received its AOC label. The Crémants reflect their relentless search for taste, balance and elegance. They are the pure expression of the land.
Production notes
The drawing can only take place after January 1 of the year following the harvest, the wines must be kept for 12 months on lees and they are only marketed after a minimum of 15 months of aging on slats.
Tasting notes
This Crémant has a pale yellow color. It is styled with a fine and intense mousse. Combining frank notes of toasted hazelnut, spices (curry) and white flowers (lily, jasmine), the nose reveals all its complexity. In turn, the palate lets in the freshness of notes of boxwood, star anise and vetiver. Pairings as an aperitif, fish and desserts.
