Product notes

25-year-old vines on the right bank of the Serein, communes of Chablis and Fleys. Southern exposure.

Production notes

Cold static settling before starting fermentation. Alcoholic and malolactic fermentations in barrels and vats. Aging 12 months on fine lees, in vats and barrels.

Tasting notes

White gold color, limpid and brilliant with silver reflections. Elegant, discreet nose, with slightly grilled, toasted notes and aromas of white-fleshed fruits. The palate is rich and juicy with notes of exotic fruits (pineapple) and hints of roasted hazelnuts on the finish. Pairings with mushrooms or foie gras.

January 2015 (Vintage 2012)

In the Middle Ages, this vineyard was on the boundary between Burgundy and Champagne. This is a plush , rich wine with a broad, full character. It offers ripeness, yellow fruits and crisp, fresh acidity at the end. Drink from 2017.

Allen Meadows, October 2014 (Vintage 2012)

This is exceptionally pretty and more elegant than I typically find it with its cool and only mildly exotic mix of both white and yellow orchard fruit, tidal pool and algae hints. The middle weight flavors are quite rich and not quite as refined as the nose but there is a lovely sense of underlying tension on the mineral-inflected and palate coating finish that, like several of the wines in the range, displays a hint of bitter lemon.

Allen Meadows, October 2022 (Vintage 2021)

A discreet but discernible application of wood sets off ripe yet cool and pure aromas of pear, apple and ocean breeze. The delicious larger-bodied flavors possess both fine concentration and power while delivering very fine length on the tension-filled finale. This isn't quite as complex, at least not yet, as the Montée de Tonnerre but I underscore that Mont de Milieu is justly known as one of the best aging premier crus.
