Product notes

25-year-old plots on the left bank of the Serein. Municipality of Chablis. Southeast exposure.

Production notes

Cold static settling before starting fermentation. Alcoholic and malolactic fermentations in vats and barrels. Duration approximately 12 months on fine lees, in vats and in barrels.

Tasting notes

Pale yellow color, limpid and brilliant with some bronze reflections. The first nose is expressive and fruity (peach, apricot) and then vegetal (fresh grass). The mouth is greedy and fruity with caramelized notes which bring a nice roundness. The finish is slightly woody, spicy. Pairings with curry shrimps and poultry skewers.

There is again excellent Chablis character suffusing the aromas of green apple, cool citrus, white flower and wet stone. The delicious, bright and racy medium-weight flavors possess more volume and power though not the same refinement on the lingering and slightly firmer finale that could also use a bit more depth.

Allen Meadows, October 2021 (Vintage 2020)

Here too there are wisps of mineral reduction on the aromas of white orchard fruit, iodine and tidal pool. There is a lovely sense of underlying tension present on the stony middle weight flavors that are shaped by lemon-tinged acidity on the slightly drier and more complex finale that is just a bit firmer. Worth considering. *Outstanding!
