Cold static settling before starting fermentation. Alcoholic and malolactic fermentation in vats. Aging for around 6 months on fine lees, in vats.
Pale gold color with some silver highlights. Half-open nose presenting fresh fruit from the orchard with a light and elegant mineral note. The fresh mouth brings a nice present density. Pairings with oysters, white meats and cheeses.
This is slightly riper still though still agreeably fresh while offering an array of aromas that could be from nowhere else but Chablis. The vibrant, delicious and well-delineated medium weight flavors possess a lovely texture that carries over to the lemony and youthfully austere finish. This is a fine Chablis villages and worth considering.
