Product notes

On the right bank of the Serein. Municipality of Chablis. Between the Chablis Grand Cru Vaudésir and Valmur. Southwest exposure. The first vines at the bottom of this hill were near the river, where amphibians came to keep company with the winegrowers.

Production notes

Static cold settling before the start of fermentation. Alcoholic and malolactic fermentation in barrels and vats. Duration 14 months on fine lees, in vats and barrels.

Tasting notes

Pale gold color, limpid and brilliant wine. Fine, elegant and fresh nose with notes of white flowers and a light woody note. With ventilation, becomes more intense and pure with a beautiful mineral freshness. Full and complex on the palate, the volume is remarkable with a fresh palette of dried fruits and ripe fruits. Pairings with lobster, foie gras and caviar.

This is the flagship wine of La Chablisienne, which owns 75% of the grand cru Grenouilles. Yellow-peach and apricot flavors are intensely ripe yet filigreed by veins of graphite and smoke. Earthen and a bit tense in youth, this concentrated, complex wine needs time to open. Approach from 2025. It should improve through 2040 and hold further.

Moderate wood sets off the super fresh, cool and admirably pure aromas of citrus, floral, pear liqueur, sea breeze and mineral reduction scents. Like several wines in the range I very much like the lovely texture of the energetic medium weight flavors that also possess fine concentration if not the same degree of minerality on the lingering finish where a hint of bitter lemon appears. This too will need a few years of bottle age such that better depth can develop and the wood treatment can more completely integrate.

Moderate wood influence is present on the ripe and very fresh aromas of green fruit, shellfish and seaweed. The succulent and very generous, even lavish, flavors possess an abundance of sappy dry extract that buffers the firm but not hard acid spine maintaining the balance on the equally long finish. This is less mineral driven than the Les Clos but there is presently a bit more depth which should only increase with time in bottle.
