Production notes

The grapes are vinified separately and are refrigerated before pressing. 50% press juice yield. Must fermentation at 16-18ºC with selected yeasts. After bottling, the second fermentation and aging take place in our cellars located 30 meters away.

Tasting notes

Pale yellow color, clean and shiny, with abundant and fine bubbles. On the nose, fresh fruit stands out against a creamy background of bakery and dried fruit notes. The palate is fresh and balanced, structured and harmonious. Pairings as an aperitif, seafood and fish

I love the fine, close-knit beads here that have found excellent integration on the palate. Restrained aromas and flavors of fine yeast, stones, star fruit, green apples and white almonds. Silky and smooth on the palate with a medium to full body before a lengthy finish. Good persistence. From organically grown grapes. Drink now.

An appealing sparkler, exuding aromas and flavors of ripe peach and star anise, with a frame of vibrant acidity and a lively, creamy bead.
