Product notes
As its name suggests, this terroir – located below the windmill that gave its name to the appellation – rests directly on the granite bedrock formed 320 million years ago. Only Gamay is able to thrive in these soils, which offer no reserves and no respite during the summer months.
Production notes
Hand-picked into crates, sorted, and often destemmed, the grapes macerate slowly for three to four weeks. Punching down or pumping over punctuates the fermentation, depending on the vintage. The wines are aged for 10 months in one-, two-, and new oak barrels in our old 17th-century cellar. The wood comes from the forests of Nivernais, Limousin, and Allier.
Tasting notes
This wine has a deep garnet red color with bright tints, and forward aromas of violets, faded roses and black fruits. In the mouth, the wine’s vibrant acidity and elegant tannins help its overall character of depth and richness. Complex aromas help the wine’s long finish.
