This wine is the blend of our eight great Moulin à Vent terroirs: Rochegrès, Carquelin, Champ de Cour, Thorins, Vérillats, La Roche, La Rochelle and Les Caves. The depth and weathering of the pink granite, as well as the exposure, vary according to the plots.
Picked by hand in boxes, sorted and often destemmed, the grapes macerate slowly for three to four weeks. Pigeages or pumping over punctuate the fermentation. The wines are aged for 10 months in concrete vats and in oak barrels of one wine, two wines and new, in our old 17th century cellar. The wood comes from the forests of Nivernais, Limousin and Allier.
Deep garnet color. Its complex nose reveals aromas of violets, ripe red fruits and black pepper. The freshness of these granite soils balances the richness and remarkable texture well.
Pairings with veal paupiettes, black pudding and cheeses.
