Production notes
Sourced entirely from our estate's vineyards. Destemmed without crushing and cold macerated for 3 to 5 days. 75% fermented in 60hL oak barrels and 25% in stainless steel. Aged for 18 months in French oak barrels, 5% new. Complete malolactic fermentation in barrel.
Tasting notes
Bright red fruits, cherries and strawberries with cream, followed by floral notes of sage and forest floor. The fruit is round and soft on the palate, with savory notes of beetroot. A long finish with dried floral notes, sage, and Morello cherry, ending with delicate tannins. Pairs well with pork chops, duck risotto, and mushrooms.
