About this winery

The Abbey of La Ferté is a Mecca of Burgundian spirituality which has generated over the course of history so many religious impulses in Europe and in the world (Cluny, Citeaux, Taizé). The Abbey of La Ferté was the first daughter of Citeaux, founded in 1113. Very quickly, the monks and lay brothers developed their possessions and cultivated vines in Givry. Product notes

The vines of the Servoisine plot are located at the northern tip of Givry, near the Premier Cru Clos du Cellier aux Moines. The vines are over 45 years old. The soil is sandy clay loam with a concentration of 34% clay and nearly 40% silt. The soil is quite deep with a high percentage of active limestone.

Production notes

The grapes are harvested by hand, sorted and destemmed. Maceration and alcoholic fermentation last 16 to 18 days at controlled temperatures in open vats, with grape punching down. The wine is aged to 100 in 228 liter oak barrels. 100% malolactic fermentation. The wine is after aging, bottled after a light filtration without fining.

Tasting notes

Intense purple color with purplish reflections. Aromas of spices such as anise and liquorice but also fruity notes: blackcurrant, blueberry and blackberry. The wine is complex with coated tannins. Its frame is fruity and supported by a lot of freshness and a saline finish. Pairings prime rib, beef tartare and firm cheeses.

The 2018 Givry 1er Cru Servoisine is showing beautifully, offering up aromas of plums, wild berries and burning embers, followed by a medium to full-bodied, ample and enveloping palate built around lively acids and velvety tannins. This is the finest wine I've tasted from Domaine de la Ferté to date.

There is an interesting touch of herbal tea to the similar aromas of cassis, poached plum and spice. The caressing and very rich medium weight flavors possess a notably forward mid-palate mouth feel that contrasts moderately with the firmer and ever-so-mildly rustic finale. This is sufficiently structured to reward a few years of aging but it should also be approachable young if that's your preference.
