Production notes

Selected grapes, manual harvest, gentle pressing in whole bunches, first fermentation at controlled temperature in stainless steel vats, partly malolactic depending on the vintage. Traditional second fermentation in bottle, three years of contact with yeasts, manual riddling, disgorged without dosage

Pale greenish yellow in colour with silver reflections, and a very fine, persistent mousse. On the nose, delicate notes of white flowers, lime, fine yellow stone fruit nuances, some mango, and a hint of orange blossom. The palate is juicy and elegant, with a core of subtle sweetness, delicate peach and pineapple notes, and a mineral, herbal-spicy finish with a touch of fine honey. Complex and long.

Medium dusky pink in colour with delicate copper reflections, and a fine mousse. On the nose, an inviting bouquet, with delicate notes of cherry compote, peach, and a hint of red forest berry confit, with some blossom honey. The palate is juicy and elegant, with a fresh structure, white stone fruit, subtle red currant notes, and a saline finish, a minerally, well-balanced food wine.
