The Borie de Maurel vines cling, in the rock, to the slopes of the Montagne Noire. This terroir has had a name for ages: Petit Causse. At Borie de Maurel, obviously, all wine-growing activities are manual, from plowing to harvesting, which “traditionally” takes place a good fortnight after the usual dates in order to pick perfectly ripe grapes.
