Product notes

Fourchaume leads to several interpretations ... lime kiln (fourchaux), fork (crossroads) or man's forks (sinister gibbet) which belonged to the Lord of Maligny.

Production notes

Static cold settling before the start of fermentation. Alcoholic and malolactic fermentation in vats and barrels. Duration 12 months on fine lees, in vats and barrels.

Tasting notes

Pale gold color with some silvery reflections. Open nose presenting the white fruits of the orchard subtly vanilla with a nice mineral intensity. Full, dense and fresh palate with a fine mineral tension, slightly spicy development and a long mineral and fruity finish. Pairings with sweetbreads, sole meunière and beaufort.

June 2021 (Vintage 2019)

Complex and ripe nose with plenty of apricot and nectarine and even a touch of tropical fruit. An almost over-ripe version of Fourchaume with a very juicy palate showing plenty of ripe citrus and quince notes with a wet stone, lemon, and ginger finish.

Neal Martin, June 2022 (Vintage 2020)

The 2020 Chablis Fourchaume 1er Cru has a pretty nose, more low key compared to the Montée de Tonnerre with touches of white peach and light wild mind notes emerging with time. The palate is well balanced with a saline Chablis entry, fine depth, crisp acidity with commendable persistence on the finish. A little stricter than other cuvées from La Chablisienne…and I like that.

The 2019 Chablis Fourchaume 1er Cru is showing a bit of unnecessary wood on the nose, though that be subsumed with bottle age. The palate is ripe and rounded with tropical notes on the entry. This is quite a fat Fourchaume vis-a-vis its peers and reveals a slight lack of tension on the finish. Still, there is fine focus and concentration, so enjoy this in its youth

A very Chablis-like nose freely offers up its aromas of quinine, petrol, green fruit and citrus rind. There is fine richness to the seductively textured and mouth coating flavors that terminate in a moderately long, clean and dry finish. While this is perfectly good, this seems to lack the same personality as the best of these 1ers plus it could use better depth.

This is ripe to the point of displaying a touch of the exotic with its array of pear, white peach citrus, mineral reduction and wisps of seashell and ocean scents. The opulent and richer flavors possess a caressing mouth feel before delivering a vibrant and citrusy finale that once again offers perfectly good but not truly special depth.
