Product notes
On the granite soils of this region protected from the Atlantic influence by a mountain barrier, the vineyards planted there see grapes ripen which maintain a relatively high natural acidity and which give the wines unique characteristics of finesse and complexity.
Production notes
The grapes are completely destemmed and lightly pressed. Only the first must is used. Short cold maceration on pressed lees, followed by decantation. Controlled fermentation at 14 ºC for 10-15 days. Aged on fine lees for a minimum of 4 months. Bottling is carried out in an inert atmosphere with total deoxygenation of the bottles.
Tasting notes
Crystalline appearance and salmon pink color. Very intense and fruity nose, with notes of cherry and strawberry complemented by aromas of lemon balm and anise. On the palate, it is young with an exceptional volume balanced by a perfect acidity to accentuate its freshness, all with a persistent finish. Pairings with tapas, pizza, grilled fish and cheese.
