Product notes
The grapes come from the twenty-hectare Villa Cavarena vineyard, situated at an altitude of 500 meters. The Allegrini family bought it in 1998 in a state of complete neglect, hoping to make it one of the most important vineyards in Valpolicella, both in size and prestige. Since then, an additional 13 hectares have been planted on this rather chalky, stony, well-drained soil.
Production notes
After hand-picking in the second half of September, de-stemming and gentle pressing, the must ferments for 9 days in stainless steel tanks, with several pump-overs. The wine remains in this type of container until February, when it undergoes a second fermentation on the marc for 8 to 10 days, with one pumping-over each day. It is matured for 4 months in stainless steel vats, followed by 11 months in Slavonian oak barrels, and a minimum of 2 months maturing in bottle.
Tasting notes
Like almost all the wines in this appellation, this one boasts a deep ruby/purple color; its aromas are equally distinctive, recalling those of black cherry, herbs and old wood; despite an abundance of fruity and very slightly sweet flavors, it surprisingly retains its freshness and balance, making it easy to drink; long, pleasant finish; at its best with dishes featuring tomato sauce, ideally with tasty grilled, roasted or braised meats; well-deserved award.
