Product notes
The grapes for this wine come from our oldest and most suitable vineyards, located in Mazon and Girlan. These vineyards are particularly well-suited thanks to their microclimatic conditions and the age of the vines, whose quality has been proven over the decades. The majority of the grapes come from Mazzon, where deep clay-limestone soils are found. The other part comes from the oldest vineyards in Girlan, where there is a moraine deposit on porphyritic volcanic rock.
Production notes
The grapes are harvested by hand and placed in small containers to avoid excessive pressure. The grapes – 10% of which are vinified in whole bunches – are transferred to stainless steel vats by gravity for alcoholic fermentation (20 to 24 days). After malolactic fermentation, the wine is aged for 12 months in barrels and small 12-hl barrels. It is then aged for 8 months in large 70-hl barrels. Finally, the wine is kept for another 8 months in bottle.
Tasting notes
Ruby red in color with light grenadine highlights and an intense and complex bouquet with notes of ripe fruit, cherry, and maraschino. This wine is elegant and rich, with a delicate palate and excellent tannic structure and lovely persistence. Pair well with roasted meats, game, and spicy cheeses.
