Production notes
Sourced entirely from K. J. Watson Vineyards in the Niagara River sub-appellation. Whole cluster cold soaked for two days, then destemmed and pressed. Fermented in 100% stainless steel for 14+ days at 16 C. No malolactic fermentation.
Tasting notes
Florals, stewed strawberries, and forest floor open in the glass. Potpourri, earth tones, and red fruits round out the nose. Mouth is full and slightly creamy from lees contact showing beautiful balance between fruit, acid, and earth tones. Refreshing acidity cleanses the palate, ending with great continuity of flavour on the finish.
