Product notes
Pairs well with roast beef in red wine sauce, Lac meat pie, spiced game stew, aged cheddar cheese. Decant 30 minutes before serving. Serve between 16 and 18°C.
Production notes
High, stony terraces. Very dry climate and exceptional sunshine. Sustainable viticulture, manual harvesting, and low yields. Long maceration (20 days) with controlled fermentation temperature and frequent pumping over to promote the development of aromas, color, and tannins from the skins. The first 6 months in vats, followed by 12 months in new barrels at 60-70%.
Tasting notes
Undoubtedly a charming and complex wine, refined and silky, yet reflecting the strong personality of its terroir. It has an intense and well-defined nose, where aromas of vanilla, licorice, leather, and ripe fruit jostle for position at the forefront. On the palate, it is powerful and warm, with beautiful tannins that are already very well integrated and just need to round out for another five good years.
