Terroir: The High Terraces: Terraces of rolled pebbles on clay soil
Production notes
The addition of grape brandy interrupts fermentation prematurely and gives the wine a higher sugar and alcohol content. Rivesaltes, however, has a more oxidized effect, making it a little closer to Madeira. Aged for at least 5 years: 75% in vats, 25% in barrels, in an oxidative environment.
Tasting notes
This wine, with its golden hues and complex nose blending candied apricot, dried fruit, and orange marmalade, possesses a perfect balance between complexity and acidity. Pair with foie gras and chocolate desserts.
