Product notes

The 1er Cru Aux Perdrix is ​​one of the most beautiful terroirs of the Nuits-Saint-Georges appellation, possessing almost all of it (99%) or a virtual monopoly. Domaine des Perdrix is ​​the only producer of this terroir. The vines were planted between 1922 and 1980.

Production notes

The grapes are harvested by hand, manually sorted and 100% destemmed. Pre-fermentation cold maceration lasting 4 to 6 days which helps us to extract the phenolic compounds. The alcoholic fermentation is carried out with indigenous yeasts. Aging for 18 months at 100% in traditional Burgundy barrels of 228 liters, 50% of which are new barrels, then 2 months in stainless steel vats.

Tasting notes

Beautiful red color with purple reflections, velvety. The nose is complex, black fruits (black cherry, blackcurrant), with a spicy hint (pepper) and ending on a delicate floral touch (rose). The mouth is ample, full and enveloping with silky tannins and a tonic and fresh finish. Pairings with country terrine and grilled meats

Smells richer and darker than the Terres Blanches. Still that hint of pepper but altogether more generous without losing an almost floral scent. In fact, this reminds me more of Morey-St-Denis with its lovely combination of floral scent and spicy, darker, structured fruit. Darker and more Nuits on the palate. Great balance between fragrance and structure, and a long finish.
