Production notes
Static cold settling before the start of fermentation. Alcoholic and malolactic fermentation in vats and barrels. Aging for around 12 months on fine lees, in vats and barrels.
Tasting notes
Pale gold color, clear and bright with subtle golden highlights. The first nose is highly expressive, revealing fruity notes (apricot, mirabelle plum) intertwined with hints of brioche and hazelnut. On the palate, the wine is full-bodied, fruity, and juicy. The oaky notes add volume and density, and are well integrated into the wine. The finish is long and slightly spicy, with delicate touches of white pepper. A rich, fruity, and indulgent wine. This Chablis Premier Cru Grande Cuvée pairs beautifully with grilled prawns or ravioli stuffed with green asparagus and lemon, served with a creamy garlic sauce.
