Product notes

Plots 25 years old on the left bank of the Serein, commune of Chablis. South-east exposure.

Production notes

Cold static settling before starting fermentation. Alcoholic and malolactic fermentations in vats and barrels. Aging for approximately 12 months on fine lees, in vats and barrels.

Tasting notes

Pale yellow color, clear and brilliant. Delicate floral notes (lily, lilac) as well as vanilla notes appear after a few seconds. The mouth is full, rich. A nice fruity flavor with a very juicy side. Lemon and zest notes appear in retro olfaction and bring energy, freshness and a beautiful aromatic persistence. Pairings with white fish and sushi

Allen Meadows, August 2023 (Vintage 2022)

Cool, layered and pretty aromas of white pepper, spice and more floral-suffused nuances lead to very rich and generously proportioned flavors that are a bit less vibrant and the finish, while clean and nicely dry, falls off more quickly. This lightly wooded effort may better come together but at present, it doesn't seem to be at the same level.
