Product notes

This village in the south of the Côte de Beaune, is one of the 5 large villages of the Côte des Blancs. Oriented east-south-east, the soils are mainly composed of clay and limestone. Les Baudines is located next to the village of Santenay.

Production notes

The harvest is manual in small crates and the grapes are fermented in the barrels of our cooperage, a third of which are new. Aging lasts about 15 months on fine lees before bottling.

Tasting notes

Brilliant color with green reflections. The bouquet, woody and assertive, opens towards apricot, honeysuckle, toasted walnuts and nutmeg. There is admirable concentration with spiciness and long mineral harmony on the finish. Pairings with tians of vegetables, Burgundian snails, egg meurette.
