The soils are mainly composed of limestone and marl, and their perfect exposure to the East allows the production of superb wines.
The harvest is manual in petty cash in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are punched twice a day during fermentation. The aging lasts about 18 months in the barrels of our cooperage, of which about a third are new.
Deep ruby red. Aromas of red fruits and spicy notes as well as hints of toast and cocoa. A good structure based on complex aromas with a brilliant harmonious finish with round tannins, which give the wine its solid body. Pairings with red tuna, tataki beef and veal chop.
Notes of cassis, plums, spices and sweet soil tones introduce the 2020 Nuits-Saint-Georges Village (Maison Louis Jadot), a medium to full-bodied, lively wine with a fleshy core of fruit and powdery structuring tannins that assert themselves on the gently grippy finish.
