Product notes

Savigny, located between 220 and 360 meters, produces red wines (almost 90%) in village and premier cru appellations. The Dominode is a climat whose soil is deep and made up of a wide variety of rocks from the top of the hill.

Production notes

The grapes are carefully sorted by hand and then destemmed. The aging lasts about 18 months in the barrels of our cooperage, of which about a third are new.

Tasting notes

Brilliant ruby color. The nose opens up with aromas of liquorice, cherry and spices. Fruity and silky with a still present volume accompanied by elegant tannins. Pairings with sweetbreads, mushroom tart and duck with cherries.

The delicious medium weight flavors possess a bit more volume though it would be fair to describe them as only moderately concentrated, all wrapped in a sneaky long and youthfully austere finish. This is sufficiently structured to reward up to a decade of keeping, which should also help to add depth.
