Hymn to the ancient indigenous grape varieties of the Pyrenean foothills, “Les Cépages Préservés” reveal the terroir of the Saint-Mont appellation in its purest expression for generations and guarantor of the future of the Appellation, these ancestral varieties offer a wine elegant with authentic character.
Production notes
Plots of vines aged 25 years, selected in the most beautiful locations of the appellation (north or west exposure). This vintage comes from the blend of 3 terroirs: calcareous clays, variegated clays and tawny sands. Aging takes place on lees in stainless steel vats for 70% and the rest is aged in barrels for 6 months on total lees.
Tasting notes
Light golden yellow color with notes of lemon, citrus and pineapple and a touch of beeswax. The palate is tasty, fresh and tense that calls you to take another glass. Pairings as an aperitif, poke bowl and fish or scallop ceviche.
