Slow fermentation in stainless steel vats at controlled temperature with daily manual punching down for 15 to 20 days. Aged for 9 months in stainless steel vats.

Floral nose. Very, very peppery and those tannins are dry. Chewy. Violets. Bitterness which tastes like grape pips and stems and which needed a bit of time in the glass and food to ameliorate. Fresh on the finish.
