Since 1957, the associated winegrowers under the Nuiton-Beaunoy name have been proud to carry loud and clear the values of the cooperative, a model of solidarity and authenticity. The union was born with the Rosé d'Orches cellar, and continued to develop in 1961 with the authorization of the Bourgogne Hautes-Côtes de Nuits and Bourgogne Hautes-Côtes de Beaune appellations, transforming the Rosé d'Orche Cellar into a Cellar of the Hautes-Côtes. With the last merger at the Caves de Vervelles in 2001, the Cave des Hautes-Côtes became the only group of producers from Côte d'Or. On the renowned slopes of the Burgundian villages, the vines produce exceptional and inimitable wines. The 428 hectares are spread out in altitude on the Côte de Beaune and the Côte de Nuits, over an alternation of wine-growing areas, forests and meadows, with a character imbued with wild beauty that shapes the landscape of the Hautes-Côtes. At the origin of the wines, viticulture is the result of close collaboration between the winegrowers and the technicians of the Hautes-Côtes Cellar, sharing their passions for vines and wine. They value the work of the soil, tillage practices, grassing and reasoned farming in the respect of the environment but also of the people who live there. On clay-limestone soils where Pinot Noir, Chardonnay and Aligoté flourish, fine wines with a floral and fruity bouquet are born. Attentive, gentle and patient, the winemaking relies on tools and men united around a single quest: to breveal the best potential of each terroir and each vintage. Nuiton-Beaunoy produces 3 million bottles, 30% of which are exported. These prestigious wines draw their character from the most beautiful climats of the Côte de Beaune and Côte de Nuits, in order to offer us the quintessence of its grape varieties. But Nuiton-Beaunoy is also committed and creative, in "adapting and reinventing ourselves constantly, but without ever denying us."
