Production notes
Total destemming, gentle pressing, natural static decanting. Alcoholic fermentation at 16°C, followed by a second fermentation in the bottle (classic method). AGING: Equal to or greater than 24 months on lees and 1 month after disgorging. 5 G/L
Tasting notes
Intense lemon color with slight greenish highlights. Intense and complex aromas, with a predominance of dried fruits and light toasted notes. The palate is fruity, with a crisp mousse, fresh, elegant, and a long, lingering finish. Pairs well with Asian and Indian cuisine.
